We cut only UK beef, a mix of Scottish and English cattle

We use just two suppliers, one in Scotland and another (for the English beef) located in nearby Essex.

Our two suppliers ensure we get the quality we expect every day of the week.

Beef is chosen predominately for its quality, but also its size.

All cattle are under 24 months old.

It is hung on the bone to enhance the flavour and tenderness.
